Peach and Blueberry Waffles

Ingredients

  • 2 eggs
  • 2 cups all-purpose flour
  • 1 3/4 cup milk
  • 1/2 cup vegetable oil
  • 1 tbsp white sugar
  • 4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla

Whip eggs until fluffy, add remaining ingredients, and cook batter in a pre-heated waffle maker. Top with fresh sliced peaches, a handful of blueberries, and a dollop of whipped cream.


Cinnamon Sugar Waffles with Caramelized Peaches

Ingredients

  • 2 eggs
  • 2 cups all-purpose flour
  • 1 3/4 cup milk
  • 1/2 cup vegetable oil
  • 1 tbsp white sugar
  • 4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/2 banana chopped into small pieces (optional)

Whip eggs until fluffy, add remaining ingredients, and cook batter in a pre-heated waffle maker. Sprinkle with cinnamon and sugar while still warm, top with plenty of caramelized peaches (see recipe below), and drizzle with maple syrup.

Caramelized Peaches

Combine 1/4 cup brown sugar, 1 tbsp melted butter, a pinch of cinnamon, and, if you’re feeling saucy, a little bit of rum. Toss 3 peaches (pre-sliced) in mixture and coat well. Spread on a baking sheet and bake in oven at 375 degrees for about 10 minutes or until they’re soft and the sugar has caramelized.


Donut Waffles

Waffle Batter

  • 1 cup sugar
  • 4 teaspoons baking powder
  • 1½ teaspoons salt
  • ½ teaspoon nutmeg
  • 2 eggs
  • ¼ cup unsalted butter, melted
  • 1 cup milk
  • 2½ cups flour

Mix the first 4 dry ingredients together, then add the eggs, butter, and milk. Add flour, mix well, and cook batter in a waffle maker on high heat. Dip waffles in chocolate glaze and sprinkles or drizzle with vanilla icing glaze and top with crushed Oreos.

Toppings 

  • Chocolate Glaze (Mix together 1/4 cup milk, 1 cup powdered sugar, and 1/2 cup cocoa powder over stove. Allow the glaze to cool a bit before dipping.)
  • Vanilla Icing Glaze (Mix together1/4 cup milk, 1 1/2 cups powdered sugar, and 1 teaspoon vanilla and simmer low on the stove in a saucepan until there are no clumps.)
  • Colored sprinkles
  • Crushed Oreos
