Most traditional, Thai Udon’s two restaurants add eggs to their noodles. The Fifth Avenue location serves a basic noodle and broth soup with a choice of roasted pork, shrimp, or tofu. The Pine Ridge branch tosses in bok choy, mushrooms, and a choice of chicken, beef, roasted pork, or shrimp.

The dinner menu at Zen Asian BBQ lists five varieties with house-made noodles. Chef Koko’s Hokkaido Ramen comes artfully bowled in a 17-hour pork broth chock-full of king crab, shrimp, mussels, calamari, soft boiled egg, corn, and other secret ingredients.

Chef Vincenzo Betulia gives his Roman Ramen, the signature dish at Bar Tulia, an Italian tweak with house semolina noodles, pork belly, sausage, and San Marzano tomatoes plus shrimp, mussels, and a fried egg in a rich chicken and clam broth.
