Mary Susan Clinton’s status as a veteran Naples Winter Wine Festival hostess with a penchant for throwing over-the-top theme parties provided the inspiration for a stylish baby shower given by Clinton and Heidi Farrugia, sister-in-law of guest of honor Yassi Papenfuss. Clinton shares one of her recipes, perfect for ladies who lunch.

 

Shelby’s Chilled Strawberry Compote


Serves 12

 

8 ounces cream cheese, softened
½ cup of sugar
8 ounces fresh whipped cream, (whipping cream beaten with ¼ cup of sugar and 1 tablespoon of sugar until fluffy)
3 cups of fresh strawberries, sliced
2 cups of crushed pineapple with juice
3 bananas, sliced

 

Whip cream cheese with an electric mixer until creamy; add sugar, beating until smooth. Fold in whipped cream and remaining ingredients. Spoon into a 13 x 9 inch pan. Freeze until firm. Cut into squares and serve nestled with Bibb lettuce in individual compotes. Serves 12.
