   If you didn’t get to the islands over the summer, here’s your chance. The fabulous Ritz-Carlton on Grand Cayman is offering a package aptly called Peace of Mind, where visitors can enjoy a third night on the house, plus breakfast (we’ll take ours in bed, thanks). Call it summer’s last hoorah.

   There are many good reasons to visit this property besides this very attractive deal. Let’s start with Eric Ripert. The star chef of Le Bernardin fame had a major latitude adjustment with Blue, his haute seafood restaurant on the property, and the accolades have not been few (Wine Spectator Best of Award of Excellence, Conde Nast Traveler Hot List-Tables, and on and on). Then there is Silver Rain, the La Prairie spa that utilizes “Swiss science” in its treatments, and looks more cutting-edge than anything I’ve seen in the Caribbean. And Jean-Michel Cousteau’s Ambassadors of the Environment program, which fosters understanding and appreciation of the region’s fragile ecosystem. And a Greg Norman-designed golf course.

   It’s all part of what the Ritz calls “Seven Wonders on Seven Mile Beach” (the latter referring to the hotel’s location)–a collection of amenities from the leaders in their respective fields, which you won’t find elsewhere.

   All that, and a third night free through December 16. Rates start at $399 per night.

   Ritz-Carlton guests can also enjoy special fares from Cayman Airways. Round trip fares from Miami start at $282 inclusive of taxes and fees.
