It is amazing how adding a bit of banana to some pancake batter changes the whole dynamic of flapjacks. This recipe is for those who love the sweeter side of life, not to mention Jack Johnson’s slow grooves. Enjoy.
Banana Pancakes
- 1 cup all-purpose flour
- 1 tbs. white sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 egg, beaten
- 1 cup milk
- 2 tbs. vegetable oil
- 3 ripe bananas (2 mashed, 1 sliced)
- 4 strawberries, quartered
- Honey (optional)
Combine flour, sugar, baking powder and salt in a bowl. In a separate bowl, mash two bananas; mix together with egg, milk and vegetable oil. Stir in flour mixture thoroughly; batter will be slightly lumpy.
Heat a buttered frying pan or griddle over medium heat. Pour batter, about a 1/4 cup per pancake, onto the pan. Cook until golden brown.
Serve with quartered strawberries and sliced banana, and drizzled with honey (optional).
