Chefs’ Hangover Antidotes: Andy Hyde’s Salmon “Burger” with Brocco-Moli

“My experience with this dish happened by accident,” says Hyde. “I was hung over, thirsty, and I needed something to eat but I didn’t want to go out of the house.”

Salmon “Burger” with Brocco-Moli

  • Broccoli
  • Guacamole
  • Salmon filet
  • Lettuce
  • Tomato
  • Red onion
  • Crisp cooked bacon
  • Old Bay seasoning, lime juice to taste
  • Jalapeño pepper, diced
  • Brioche bun

Method:

To make the brocco-moli, boil broccoli for four minutes and blend in a Vitamix or blender with its liquid until it is smooth. Fold in an equal amount of prepared guacamole to the broccoli purée. Season with Old Bay, lime juice, and diced jalapeños.

Pan sear salmon to medium. Compose the sandwich with salmon, lettuce, tomatoes, and red onion on a brioche bun. Top with brocco-moli and cooked bacon. Serve with a side of sweet potato fries.
