Coated in sugar and topped with a chocolate kiss, these sweet little cookies create the perfect combination for all those chocolate-peanut-butter lovers out there. In addition, these bite-sized cookies are easy to make, easy to bake, and small enough to to eat several of without feeling guilty.
Ingredients: Makes 4 dozen
- ½ cup shortening
- ½ cup peanut butter
- 2 tbsp. milk
- 1 tsp. vanilla
- 1 egg
- 1¾ cups flour
- ½ cup sugar
- ½ cup brown sugar, packed
- 1 tsp. salt
- Additional sugar, for rolling
- 48 chocolate kisses
Preheat oven to 375 degrees F. In a mixer, blend shortening and peanut butter together until creamy. Add milk, vanilla, and egg. Stir in flour, sugar, brown sugar, and salt, and blend at low speed until a stiff dough forms. Shape into 1-inch balls and roll in additional sugar. Place balls two inches apart on ungreased cookie sheets and bake for 10-12 minutes or until golden brown. Immediately top each cookie with a chocolate kiss, pressing down firmly so the cookie cracks around the edges. Remove from cookie sheets and let cool.
