Nothing says America like a helping of meatloaf. Impress your friends at your next backyard barbecue by following the recipe below for a meatloaf hamburger stuffed with cheddar cheese and bacon. Enjoy.
Yields 4 burgers
- 1 lb. ground beef chuck (85 percent lean)
- 1/2 lb. ground pork
- 1 tsp. chili powder
- 1 tsp. cayenne pepper
- 1 tsp. smoked paprika
- Salt and pepper to taste
- 1/2 white onion, chopped
- 2 cloves garlic, minced
- 1 egg
- 2 dashes hot sauce
- 1/3 cup bread crumbs
Stuffing
- 6 oz. sharp cheddar
- ¼ pound bacon (four thick slices), cooked and chopped
Cook bacon and chop; set aside.
In a small dish, combine chili powder, cayenne pepper, smoked paprika, and salt and pepper. In a large bowl, combine ground beef, ground pork, onion, garlic, bread crumbs, eggs and spice mix. Knead gently until thoroughly mixed. Form into eight four-inch patties.
Form cheddar cheese and bacon into four 2½-inch disks; place onto four of the patties. Take the remaining four patties and top the others, pinching the sides to completely seal.
Brush burgers with oil. Cook burgers on moderate heat (180 degrees) until browned on the bottom (about 3 minutes); flip and repeat. If cooking on a flattop or griddle, invert a heatproof bowl over the burger patties to promote even cooking.
Serve on a fresh brioce
*Because pork is part of the recipe, err on the side of caution and heat to 160 degrees.
